Salmon, and fish recipes in all forms, have secured their spots as staple meals of British cuisine, capturing both the light and freshness of Spring, and the warmth and heartiness of Winter nights. If you're a seafood fan, there's no doubt you've enjoyed many different twists and variations on this classic dish involving different seafoods, from haddock, to cod, to perhaps even angler fish. The use of salmon in dishes can be traced all the way back to Neanderthal history (although they hadn't quite figured out the traybake just yet). Cooked salmon of different varieties were largely enjoyed by French King Charles V in the 14th Century, and became celebrated amongst Medieval cuisine. Being such a versatile fish, there are many ways that both humans and dogs can enjoy the delicious treat, so read on for our traybake version, with tasty roasted vegetables. 

For our Tilly & Ted Salmon Traybake recipe, we wanted your special pup pal to enjoy the best of the best, so chose to combine both fish and seaweed for our recipe. These superfoods are packed with many Amino Acids and Omegas, for easy digestion and that energising zing (psst...check out our recent post on our top 10 doggy superfoods, for more information on the health benefits of our meals).

This (human) recipe below is packed with essential vitamins and a tasty kick - hopefully leaving you with a shiny coat and a happy tummy, just like your dog.

Ingredients 

4 salmon fillets

250g of new potatoes, sliced into 3mm rounds

1 red pepper, sliced into 8 chunks

1 red onion, sliced into 8 chunks

12 cherry tomatoes, kept on the vine but broken into 3’s

12 asparagus spears/tips

2 tablespoons of olive oil

1 teaspoon of tarragon

1 teaspoon of parsley

A good pinch of salt and pepper

Instructions

1) Set your oven to 180C fan.

2) Spread the potatoes and vegetables out onto a large baking tray.

3) Drizzle with oil and sprinkle on the tarragon, parsley, and salt and pepper.

4) Bake for 20 minutes in your preheated oven.

5) Remove from the oven and toss to loosen.

6) Tuck the salmon fillets in amongst the vegetables, and brush lightly with oil before garnishing with more tarragon and parsley.

7) Bake for another 20 minutes until the salmon is cooked through and the potatoes are soft and tender.
