With the weather so chilly and grey, there's nothing like a delicious and hearty recipe to warm your soul and fill your belly. This chicken and salmon pie twists the classic surf and turf combo into a yummy and accessible recipe, that is super simple to make. There's nothing like a piping hot pie to pump you up, and we know your waggy pup pal feels the same! We'll break down this recipe into easy steps and tell you all about the rich history of the pie, so you can feel top dog of your kitchen.

The paw-fect history of the pie
The humble pie has been a classic dish across many countries, in many variations, for a very long time. The earliest examples of pies can be traced all the way back to Ancient Egypt, with a rough version being made with a honey filling and a crust of oats, barley, and rye, as well as a chicken pie recipe being discovered carved into a tablet. The Greeks were then thought to have created pie pastry, before the Romans used pastry and pie casing in an alternative way: to preserve their meats. The word 'pastry' was then recorded as being in use during the mid 14th Century, and Medieval Latin even used the word 'pie' to refer to meat or fish enclosed in pastry. Throughout Medieval Britain, the pie was usually made as such, although fancier fillings and varieties were created to be the centrepieces of many banquets and feasts.
For our pie recipe, we wanted your special canine to enjoy the best of the best,
so decided to go with two hearty protein sources from both the land and the sea. With cheery chicken and succulent salmon, our meal is bursting with easy digestion and energising flavour (psst...check out our recent post on our top 10 doggy superfoods for more information on the health benefits of our meals).
This (human) recipe below uses chicken, salmon, and leeks, packing it with essential vitamins and a tasty kick - hopefully leaving
you with a shiny coat and happy tummy just like your pup.
Ingredients
1 fillet of salmon
1 chicken breast
3 tbsp of olive oil
1 tbsp of butter
2 cloves of minced garlic
2 bay leaves
2 sprigs of chopped thyme
2 sprigs of chopped rosemary
Salt and pepper, to taste
120ml of white wine
600 ml of chicken stock
1 medium leek
2 tbsp of cornflour mixed with 2 tbsp of water, to make a paste
1 sheet of ready-made puff pastry
1 large beaten egg
Instructions
1) Pre-heat your oven to 180C.
2) Prepare your salmon by peeling away any skin, chopping into cubes, heating 2 tbsp of olive oil in a large frying pan, and frying on all sides until pink and cooked through.
3) Repeat with your chicken until it is no longer pink, and cooked through, adding another tbsp of olive oil if needed.
4) Melt your butter in large saucepan over a medium heat, and add in your leeks. Cooked for around 7 minutes, or until almost tender, before adding in your garlic. Cook this for a further minute, or until the garlic is browned and fragrant.
5) Add in your white wine and reduce to a simmer. Once it has reduced, add in your chicken broth, bay leaves, thyme, rosemary, and salt and pepper to taste. Bring this to a simmer, and stir through your cornflour paste to thicken.
6) Once thickened, stir through your chicken and salmon, before pouring your mixture into a large pie or casserole dish.
7) Roll out your puff pastry, and cover the top of the dish tightly with it, trimming off any edges with a knife. Make few cuts on top to act as steam vents, and use the extra pastry to make a design on top if you wish, such as a portrait of your best doggy friend!
8) Brush the top of the pie with the beaten egg, before popping into the oven for 25 - 30 minutes, or until the pastry is golden and the filling is bubbling.
9) Season to taste, and enjoy!
