Tuscan Chicken and Salmon: Unique recipes for humans and kittycats

Tuscan History

Tuscan food is incredibly popular, and enjoyed by many, with the Italian cuisine evolving and taking on new twists throughout time. Tuscan meals originate exactly where you'd think from: Tuscany. This region of Italy is best known for its rolling hills and beautiful landscapes, and of course, food. Food from this region has ancient origins, going all the way back to 800 BC with the Etruscan people. The cuisine also has influences from Greece and Rome, but was solidified as its own staple when many glorious artists began to flourish in the Renaissance period, and expected the best of the best local cuisine within noble courts. Typically, Tuscan cuisine is fairly fresh and simple, making use of the natural resources of the region. This includes the use of fresh herbs and vegetables, and easily hunted game meats. Today, Tuscan cuisine has evolved, particularly in the West, to include creamy and fresh sauces using such classic herbs as basil, parsley, or thyme. Chicken and salmon have also become classic protein sources for Tuscan meals, reflecting the fresh tasting ingredients and utilising the most readily available meats of today. To serve up this show-stopping dish whilst your kitten enjoys a hearty portion of our Chicken with Salmon Delight, read on for our easy to follow recipe. 

For our Chicken with Salmon Delight recipe, we wanted your special feline to enjoy the best of the best, so chose to combine both fish and meat for this meal. These superfoods are packed with protein, amino acids, omegas, and more, for easy digestion and that energising zing (psst...check out our recent post on our top 10 kitty superfoods, for more information on the health benefits of our meals).

This (human) recipe below is packed with essential vitamins and a tasty kick - hopefully leaving you with shiny fur and a happy tummy, just like your cat.

Ingredients 

2 boneless and skinless chicken breasts

2 salmon fillets

1.5 tsp paprika

1.5 tsp onion powder

1 tbsp olive oil

Juice of half a lemon

2 tbsp butter

6 cloves of garlic

6 tbsp sun dried tomatoes, drained, with 3 tbsp of the oil reserved

2 tsp dijon mustard

700ml double cream

300g spinach

150g fresh grated parmesan cheese

Salt and pepper, to taste

A handful of chopped parsley, to serve

Instructions

1) Heat oven to 50°C fan.

2) Season your chicken with salt, pepper, paprika and onion powder, and season your salmon with salt and pepper.

3) Heat 2 tbsp of the reserved sun dried tomato oil in a large pan over medium-high heat. Sear the chicken for 6-8 minutes on each side, or until browned and cooked through. Transfer to a plate or pan, and put in the oven to keep warm.

4) Add the olive oil to the already hot pan, and sear your salmon, flesh-side down first, for 5 minutes on each side, or until cooked to your liking. Once cooked, transfer to a plate or pan, and squeeze the lemon all over, before also transferring to the oven to keep warm.

5) Add the rest of the sundried tomato oil, and the butter, into the hot pan, and stir until the has butter melted.

6) Fry the garlic for up to 1 minute, or until fragrant, before adding the sun dried tomatoes. Fry for 1-2 minutes to release flavour. Add in the dijon mustard, and stir to combine.

7) Reduce the heat to low, and add the cream before bringing it to a gentle simmer, stirring occasionally. Season with salt and pepper to taste.

8) Add the spinach leaves and wilt in the sauce. Add in the parmesan, and allow to simmer just until the cheese melts into the sauce.

9) Serve your chicken and salmon fillets with pasta, rice, or vegetables of your choice, and pour the delicious sauce all over. Garnish with the chopped parsley, and enjoy.
